Avocado Egg Salad Recipe

A creamy egg salad made with avocado instead of heavy mayo.

Ingredients
  

  • 6 hard-boiled eggs chopped
  • 1 large avocado mashed
  • ¼ cup red onion chopped
  • ¼ cup celery chopped optional
  • 1 –2 tablespoons lemon juice
  • 2 tablespoons Greek yogurt or mayo optional
  • 2 tablespoons fresh herbs chopped
  • Salt and pepper to taste

Method
 

  1. Chop hard-boiled eggs.
  2. Mash avocado in a bowl.
  3. Add eggs, onion, celery, and herbs.
  4. Stir in lemon juice and optional yogurt.
  5. Season with salt and pepper.
  6. Mix gently and serve.

Notes

  • Use ripe avocado
  • Add lemon juice to prevent browning
  • Serve fresh for the best taste
  • Customize with spices or add-ins
