Béarnaise Sauce Recipe

A rich and creamy French sauce made with butter, egg yolks, and herbs.

Ingredients
  

  • 3 egg yolks
  • ½ cup butter melted
  • 2 tablespoons white wine vinegar
  • 1 shallot finely chopped
  • 1 tablespoon fresh tarragon chopped
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Method
 

  1. Reduce vinegar, shallots, and tarragon.
  2. Prepare double boiler.
  3. Whisk egg yolks with reduction.
  4. Slowly add butter while whisking.
  5. Season and finish.
  6. Serve warm.

Notes

  • Use low heat
  • Whisk continuously
  • Add butter slowly
  • Serve immediately
