Beef Bourguignon Recipe

A classic French stew made with tender beef, red wine, and vegetables.

Ingredients
  

  • 2 lbs beef chuck cut into chunks
  • 2 cups red wine
  • 2 cups beef broth
  • 2 carrots chopped
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 cup mushrooms sliced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Method
 

  1. Season and brown beef.
  2. Cook vegetables.
  3. Add tomato paste.
  4. Deglaze with wine.
  5. Add broth and herbs.
  6. Simmer until tender.
  7. Add mushrooms and finish.

Notes

  • Brown the beef well
  • Cook slowly
  • Use a good quality wine
  • Flavor improves over time
