Borscht Soup Recipe

A traditional beet soup made with vegetables and a flavorful broth.

Ingredients
  

  • 2 cups beets peeled and chopped
  • 1 cup cabbage chopped
  • 1 carrot chopped
  • 1 potato chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable or beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 tablespoon vinegar or lemon juice
  • Salt and pepper to taste

Method
 

  1. Prepare vegetables.
  2. Sauté onion and garlic.
  3. Add beets and carrots.
  4. Add broth and potatoes.
  5. Stir in cabbage and tomato paste.
  6. Simmer until tender.
  7. Add vinegar and season.
  8. Serve.

Notes

  • Cut vegetables evenly
  • Add acid for balance
  • Simmer gently
  • Flavor improves over time
