Broccoli Rice Casserole Recipe

A creamy casserole made with broccoli, rice, and cheese.

Ingredients
  

  • 2 cups cooked rice
  • 2 cups broccoli florets
  • 1 cup cheddar cheese shredded
  • 1 can cream of mushroom or chicken soup
  • ½ cup milk
  • ¼ cup onion chopped
  • 2 tablespoons butter
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • ½ cup breadcrumbs or extra cheese optional

Method
 

  1. Preheat oven to 350°F and grease a dish.
  2. Steam broccoli until tender.
  3. Mix rice, broccoli, soup, milk, cheese, onion, butter, and seasoning.
  4. Transfer to casserole dish.
  5. Add topping if desired.
  6. Bake for 25–30 minutes until bubbly.
  7. Let cool slightly and serve.

Notes

  • Use fresh or frozen broccoli
  • Add protein for a complete meal
  • Adjust creaminess with milk
  • Great for make-ahead meals
