Cannoli Recipe

Crispy pastry shells filled with a sweet ricotta cream and topped with powdered sugar.

Chill 30 minutes

Ingredients
  

  • Shells:
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 tablespoons butter
  • 1 egg
  • ¼ cup white wine or 1 tablespoon vinegar + water
  • Pinch of salt
  • Oil for frying
  • Filling:
  • 2 cups ricotta cheese well drained
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips
  • Topping:
  • Powdered sugar for dusting

Method
 

  1. Make and rest dough.
  2. Roll, cut, and shape around molds.
  3. Fry until crisp and golden.
  4. Prepare filling and chill.
  5. Fill shells just before serving.
  6. Dust with powdered sugar.

Notes

  • Drain ricotta thoroughly
  • Fry at the correct temperature
  • Fill just before serving
  • Store components separately
