Chicken Pot Pie Pasta Recipe

A creamy pasta dish inspired by classic chicken pot pie flavors.

Ingredients
  

  • 2 cups pasta
  • 2 cups cooked chicken
  • 1 cup mixed vegetables
  • ½ onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups chicken broth
  • 1 cup milk or cream
  • 1 teaspoon thyme or Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Cook pasta and set aside.
  2. Cook chicken if needed and set aside.
  3. Melt butter and sauté onion and garlic.
  4. Add vegetables and cook until tender.
  5. Stir in flour and cook briefly.
  6. Add broth and milk, stirring until thickened.
  7. Add chicken and pasta, mix well.
  8. Simmer briefly and serve warm.

Notes

  • Use rotisserie chicken for convenience
  • Adjust thickness with broth or milk
  • Add cheese for extra richness
  • Great for leftovers
