Chickpea Cookie Dough Recipe

A creamy, healthy edible cookie dough made from chickpeas, peanut butter, and chocolate chips.

Ingredients
  

  • 1 can chickpeas 15 ounces drained and rinsed
  • ¼ cup peanut butter
  • ¼ cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • ¼ cup oat flour
  • 2 tablespoons milk
  • ¼ teaspoon salt
  • cup mini chocolate chips

Method
 

  1. Drain and rinse chickpeas thoroughly.
  2. Blend chickpeas, peanut butter, maple syrup, vanilla, oat flour, milk, and salt until smooth.
  3. Add more milk if needed for a creamy texture.
  4. Stir in chocolate chips.
  5. Chill for 15–20 minutes before serving.

Notes

  • Blend thoroughly for the smoothest texture.
  • Adjust the sweetness by adding more maple syrup.
  • Mini chocolate chips distribute best in the dough.
  • Store in the refrigerator for up to 4 days.
