Crispy tortilla chips simmered in salsa and topped with eggs, cheese, avocado, and fresh herbs for a flavorful Mexican breakfast.

Ingredients
  

  • 3 cups corn tortilla chips
  • 1 tablespoon olive oil
  • ½ small onion chopped
  • 2 cloves garlic minced
  • cups red or green salsa
  • 4 large eggs
  • ½ cup queso fresco crumbled
  • 1 avocado sliced
  • 2 tablespoons fresh cilantro chopped
  • 1 lime cut into wedges
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Heat olive oil in a skillet and sauté onion until soft.
  2. Add garlic and cook briefly until fragrant.
  3. Pour in salsa and simmer for several minutes.
  4. Toss tortilla chips in the sauce until lightly softened.
  5. Top with fried eggs, queso fresco, avocado, cilantro, and lime before serving.

Notes

  • Add shredded chicken for a heartier meal.
  • Use homemade salsa for the best flavor.
  • Serve immediately so the chips stay slightly crisp.
  • Garnish with Mexican crema if desired.
