Cioppino Recipe

A hearty seafood stew made with mixed seafood in a rich tomato and herb broth.

Ingredients
  

  • 1 lb mixed seafood shrimp, fish, mussels, clams
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 can crushed tomatoes
  • 4 cups seafood or fish broth
  • 1 cup white wine
  • 1 teaspoon dried oregano
  • 1 teaspoon thyme
  • Salt and pepper to taste

Method
 

  1. Prepare seafood.
  2. Sauté onion and garlic.
  3. Add tomatoes, broth, wine, and herbs.
  4. Simmer broth.
  5. Add seafood in stages.
  6. Cook until seafood is done.
  7. Serve hot.

Notes

  • Use fresh seafood
  • Do not overcook seafood
  • Discard unopened shellfish
  • Serve with bread
