Coconut Cake Recipe

A soft and fluffy coconut cake layered with creamy frosting and shredded coconut.

Ingredients
  

  • Cake:
  • 2 cups all-purpose flour
  • cups sugar
  • 2 teaspoons baking powder
  • ½ cup butter softened
  • 3 eggs
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • Pinch of salt
  • Frosting:
  • 1 cup butter softened
  • 3 cups powdered sugar
  • 2 –3 tablespoons coconut milk
  • 1 teaspoon vanilla extract
  • Topping:
  • cups shredded coconut

Method
 

  1. Preheat oven and prepare pans.
  2. Mix dry ingredients.
  3. Cream butter and sugar.
  4. Add eggs and vanilla.
  5. Alternate dry ingredients and coconut milk.
  6. Fold in coconut and bake.
  7. Cool completely.
  8. Prepare frosting.
  9. Frost cake and coat with coconut.
  10. Serve.

Notes

  • Use room temperature ingredients
  • Do not overmix the batter
  • Cool fully before frosting
  • Toast coconut if desired
