German Spaetzle Recipe

Traditional German soft egg noodles with a tender texture, finished with butter.

Ingredients
  

  • 2 cups all-purpose flour
  • 4 large eggs
  • ½ cup milk
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 2 tablespoons chopped parsley optional

Method
 

  1. Mix flour and salt in a bowl.
  2. Add eggs and milk and mix into thick batter.
  3. Let batter rest for 10–15 minutes.
  4. Bring salted water to a boil.
  5. Drop batter into water using a strainer or spoon.
  6. Cook until spaetzle float (about 2–3 minutes).
  7. Remove and toss with butter.
  8. Garnish and serve.

Notes

  • Batter should be thick but pourable
  • Do not overcook
  • Best served fresh with butter
  • Can be pan-fried for a crispy texture
