Ingredients
  

  • 4 cups chicken or vegetable broth
  • 1 cup mushrooms sliced
  • 1 cup tofu cubes or cooked chicken
  • 2 eggs beaten
  • 2 tablespoons soy sauce
  • 2 tablespoons vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon chili paste or pepper
  • 2 cloves garlic minced
  • 1 teaspoon ginger minced

Method
 

  1. Sauté garlic and ginger.
  2. Add broth, mushrooms, and protein.
  3. Stir in soy sauce, vinegar, and chili.
  4. Add cornstarch slurry to thicken.
  5. Drizzle in eggs while stirring.
  6. Serve hot.

Notes

  • Adjust spice and sourness to taste
  • Stir gently when adding eggs
  • Don’t over-thicken the soup
