Meatball Soup Recipe

A comforting soup made with tender meatballs and vegetables in a savory broth.

Ingredients
  

  • 1 lb ground beef or turkey
  • ½ cup breadcrumbs
  • 1 egg
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 4 cups broth
  • 2 tablespoons tomato paste or 1 cup diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup pasta or 2 potatoes diced optional

Method
 

  1. Mix meat, breadcrumbs, egg, garlic, salt, and pepper.
  2. Form small meatballs.
  3. Brown meatballs in oil and set aside.
  4. Sauté onion, carrots, celery, and garlic.
  5. Add broth and tomato, then simmer.
  6. Return meatballs and cook 15–20 minutes.
  7. Add pasta or potatoes and cook until tender.
  8. Season and serve warm.

Notes

  • Keep meatballs small for even cooking
  • Brown meatballs for extra flavor
  • Customize with vegetables or pasta
  • Great for freezing and meal prep
