A classic Thai stir-fried noodle dish made with wide rice noodles, chicken, eggs, and Chinese broccoli in a savory soy-based sauce.

Ingredients
  

  • 8 ounces wide rice noodles
  • 1 tablespoon vegetable oil
  • 8 ounces chicken breast thinly sliced
  • 2 cloves garlic minced
  • cups Chinese broccoli chopped
  • 2 large eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • ¼ teaspoon black pepper

Method
 

  1. Cook rice noodles according to package instructions and drain.
  2. Stir-fry chicken in oil until cooked through.
  3. Add garlic and Chinese broccoli and cook until slightly tender.
  4. Scramble eggs in the pan.
  5. Add noodles and sauce, toss everything together, and stir-fry until heated through.

Notes

  • Use high heat for authentic flavor.
  • Fresh rice noodles provide the best texture.
  • Add chili flakes for a spicy version.
  • Best served immediately after cooking.
