Method
- Wash and trim the beets and place them in a pot of water.
- Boil for 30–40 minutes until fork-tender.
- Cool slightly, peel the skins, and slice the beets.
- In a saucepan combine vinegar, water, sugar, salt, cloves, peppercorns, and bay leaf.
- Bring the mixture to a simmer until sugar dissolves.
- Place sliced beets into jars and pour hot brine over them.
- Cool and refrigerate for at least 24 hours before serving.
Notes
- Allow beets to marinate overnight for the best flavor.
- Store refrigerated for up to 2 weeks.
- Add sliced onions for extra flavor.
- Serve chilled or at room temperature.
