Pickled Beets Recipe

Tender beets preserved in a sweet and tangy vinegar brine with warm spices.

Ingredients
  

  • 1 pound fresh beets
  • 1 cup white vinegar
  • ½ cup water
  • ½ cup granulated sugar
  • 1 teaspoon salt
  • 4 whole cloves
  • ½ teaspoon whole black peppercorns
  • 1 bay leaf

Method
 

  1. Wash and trim the beets and place them in a pot of water.
  2. Boil for 30–40 minutes until fork-tender.
  3. Cool slightly, peel the skins, and slice the beets.
  4. In a saucepan combine vinegar, water, sugar, salt, cloves, peppercorns, and bay leaf.
  5. Bring the mixture to a simmer until sugar dissolves.
  6. Place sliced beets into jars and pour hot brine over them.
  7. Cool and refrigerate for at least 24 hours before serving.

Notes

  • Allow beets to marinate overnight for the best flavor.
  • Store refrigerated for up to 2 weeks.
  • Add sliced onions for extra flavor.
  • Serve chilled or at room temperature.
