Pork Loin Roast Recipe

A juicy oven-roasted pork loin seasoned with garlic, herbs, and simple spices.

Ingredients
  

  • 2 pounds pork loin roast
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ cup chicken broth

Method
 

  1. Preheat oven to 375°F and prepare a roasting pan.
  2. Pat pork loin dry and rub with olive oil.
  3. Season with garlic, rosemary, thyme, salt, pepper, and paprika.
  4. Place the roast in the pan and pour chicken broth around it.
  5. Roast for 45–60 minutes until the internal temperature reaches 145°F.
  6. Let the pork rest for 10 minutes before slicing.
  7. Slice and serve warm.

Notes

  • Use a meat thermometer for best results.
  • Rest the meat before slicing to keep it juicy.
  • Serve with roasted vegetables or mashed potatoes.
  • Store leftovers in the refrigerator for up to 4 days.
