Method
- Preheat oven to 400°F.
- Wash potatoes, pierce with a fork, and bake for 45–50 minutes until tender.
- Cut potatoes in half and scoop out most of the flesh.
- Brush skins with olive oil and season with salt and pepper.
- Bake skins for 10 minutes, flip, then bake another 10 minutes until crispy.
- Fill with cheese and bacon and bake 5 minutes until melted.
- Top with green onions and sour cream.
- Serve hot.
Notes
- Leave a thin layer of potato inside the skins.
- Bake twice for the crispiest texture.
- Add jalapeños for a spicy version.
- Best served fresh and hot.
