Method
- Bring water to a boil with lemon, salt, peppercorns, and bay leaf.
- Add shrimp and cook for 2–3 minutes until pink.
- Transfer shrimp to an ice bath.
- Mix ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce.
- Chill shrimp and serve with sauce.

- Do not overcook shrimp
- Always use an ice bath
- Serve well chilled
- Sauce can be made ahead
