Slow Cooker Pot Roast Recipe

A hearty slow-cooked beef roast with vegetables and rich savory gravy.

Ingredients
  

  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 carrots chopped
  • 4 potatoes chopped
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Method
 

  1. Season roast with salt and pepper and sear in oil.
  2. Place vegetables in slow cooker.
  3. Add roast on top.
  4. Pour broth, Worcestershire sauce, and tomato paste.
  5. Add garlic and herbs.
  6. Cook on low for 8 hours or high for 4–5 hours.
  7. Shred or slice and serve.

Notes

  • Sear meat for the best flavor
  • Use a chuck roast for tenderness
  • Add cornstarch slurry for a thicker gravy
  • Store leftovers up to 4 days
