Method
- Sauté onion in olive oil until soft.
- Add garlic and spinach and cook until wilted.
- Mix with feta, eggs, herbs, salt, and pepper.
- Layer phyllo sheets in a baking dish brushing each with oil.
- Add filling evenly.
- Top with remaining phyllo layers.
- Bake at 375°F for 35–40 minutes.
- Cool slightly before serving.

- Keep phyllo covered while working
- Drain spinach well
- Use multiple layers for crisp texture
- Best reheated in the oven for crispiness
