Sticky Toffee Pudding Recipe

A soft date sponge cake soaked in a rich toffee sauce.

Ingredients
  

  • For the Pudding:
  • 1 cup chopped dates
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • ½ cup unsalted butter
  • ¾ cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • For the Toffee Sauce:
  • ½ cup butter
  • 1 cup brown sugar
  • 1 cup heavy cream

Method
 

  1. Combine dates, baking soda, and boiling water. Let it sit 10 minutes.
  2. Cream butter and sugar, then add eggs and vanilla.
  3. Stir in date mixture.
  4. Fold in flour, baking powder, and salt.
  5. Bake at 350°F for 30–35 minutes.
  6. Heat butter, sugar, and cream for sauce.
  7. Pour sauce over warm cake and serve.

Notes

  • Use soft dates for the best texture
  • Serve warm with sauce
  • Don’t overmix the batter
  • Store and reheat easily
