Strawberry Rhubarb Pie Recipe

A classic pie with a sweet strawberry and tart rhubarb filling in a flaky crust.

Ingredients
  

  • 2 cups strawberries sliced
  • 2 cups rhubarb chopped
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 double pie crust
  • 1 egg for egg wash

Method
 

  1. Preheat oven to 400°F.
  2. Mix strawberries, rhubarb, sugars, cornstarch, lemon juice, vanilla, and salt.
  3. Place crust in pie dish and add filling.
  4. Top with second crust or lattice.
  5. Brush with egg wash and vent.
  6. Bake for 45–55 minutes.
  7. Cool for 2 hours before slicing.

Notes

  • Adjust sugar based on tartness
  • Let the pie cool fully to set
  • Protect crust edges while baking
  • Serve with ice cream for the best experience
