Method
- Preheat oven to 400°F.
- Mix strawberries, rhubarb, sugars, cornstarch, lemon juice, vanilla, and salt.
- Place crust in pie dish and add filling.
- Top with second crust or lattice.
- Brush with egg wash and vent.
- Bake for 45–55 minutes.
- Cool for 2 hours before slicing.
