Stuffed Pepper Soup Recipe

A hearty soup made with ground beef, bell peppers, rice, and a rich tomato-based broth.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion chopped
  • 3 bell peppers chopped
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 can 15 oz tomato sauce
  • 1 can 14.5 oz diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups cooked rice

Method
 

  1. Heat olive oil and cook ground beef until browned.
  2. Add onion and bell peppers and cook until soft.
  3. Stir in garlic and cook briefly.
  4. Add broth, tomato sauce, and diced tomatoes.
  5. Season with spices and stir.
  6. Simmer for 20–25 minutes.
  7. Add cooked rice and heat through.
  8. Serve warm.

Notes

  • Cook rice separately for the best texture
  • Add extra broth if the soup thickens
  • Great for meal prep
  • Freezes well without rice
