Taco Casserole Recipe

A hearty casserole layered with seasoned meat, beans, tortillas, and melted cheese.

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup black beans drained
  • 1 cup corn
  • 1 cup diced tomatoes or salsa
  • 2 cups tortilla chips or tortillas
  • 1 ½ cups shredded cheese
  • 1 small onion chopped
  • 2 cloves garlic minced
  • ½ cup sour cream optional for serving

Method
 

  1. Preheat oven to 375°F.
  2. Cook ground beef and onion until browned.
  3. Add garlic and cook briefly.
  4. Stir in taco seasoning, beans, corn, and tomatoes.
  5. Layer chips and meat mixture in baking dish.
  6. Top with cheese.
  7. Bake for 20–25 minutes until bubbly.
  8. Cool slightly and serve.

Notes

  • Use thick tortilla chips for the best texture
  • Don’t add too much liquid
  • Customize with toppings
  • Store leftovers up to 4 days
