Ingredients
  

  • 2 cups mixed beans kidney, black, etc.
  • 2 cups crushed tomatoes
  • 1 cup vegetable broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste

Method
 

  1. Sauté onion and garlic.
  2. Add bell peppers and cook.
  3. Add tomatoes and broth.
  4. Stir in beans and spices.
  5. Simmer until thickened.
  6. Adjust seasoning and serve.

Notes

  • Use mixed beans for the best texture
  • Simmer longer for a deeper flavor
