Ingredients
  

  • 2 cups white beans canned, drained, rinsed
  • 1 onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Method
 

  1. Sauté onion, carrots, and celery.
  2. Add garlic and cook briefly.
  3. Add beans, broth, and herbs.
  4. Simmer until flavors develop.
  5. Mash some beans for texture.
  6. Season and serve.
